Kasidie's Provocative Paella

by Chef Kasidie
What could be better than inviting a few of your sexy swinger friends over for a dinner party? How about impressing them by serving up some zesty homemade paella (pronounced "pie-a-yuh") paired with the perfect wine? Paella is a highly spiced Spanish dish consisting of a mixture of rice, spices, vegetables, some meat such as chicken or sausage, and of course seafood. At any dinner party, having a dish with loads of seafood in it always makes it extra special. Paella is one of those dishes that can be extra fun to serve. It usually is served in a big family-style platter to display all the seafood treasures, and often guests eat some of the seafood offerings with their hands which makes this dish more pleasurable, sensual and fun.
A Note About Saffron

This colorful spice has long been believed to be a powerful aphrodisiac with properties that stimulate the erogenous zones. But pay attention and watch your consumption: excessive doses of saffron may cause uncontrollable laughter... No wonder it's the world's most expensive spice! |

Pairing a wine to match your paella dish doesn't have to be tricky. Of course, the old rule can apply, serve white wine with fish, but then again there are the other ingredients and the spices to consider. A mild white wine's flavor could get lost with this dish. It is therefore more advisable to serve a hearty white, a robust red or even a lovely rosé. A wine such as a Pinot Noir would go well here, as it is a lighter red wine which will not overpower the lobster or crab, but it is still strong enough to complement the other meats in the dish. You could also choose a Pinot Grigio which balances some of the garlic in the dish, but can still complement the zesty Spanish flavorings.
Here is a great recipe for paella that you may wish to try at your next dinner party. It is easy to make and sure to be a hit, especially when you pair it with an appropriate wine... And possibly a sexy chef outfit.
Kasidie's Provocative Paella
1 green pepper
2 dashes cumin
2 medium onions
1 dash curry powder
1 can tomato paste
1 tsp. basil
3 tsp. minced garlic
10 olives
1 tsp. black pepper
1 tsp. thyme
2 pkgs. saffron mix (Sazón Goya Seasoning)
Combine all above ingredients in food processor and process until smooth.
In a large roasting pan, heat 3 tablespoons of extra virgin (hee hee) olive oil. Then add:
4-5 crab legs, cut into 2" pieces
4-5 chunks lobster meat
4 fish fillets (cod or sole) cut into chunks
4 skinless, boneless chicken breasts, cut into chunks
3 spicy Italian sausages, but into 1" chunks
1 pkg. Med-large shrimp
3 lbs. Cleaned and bearded fresh mussels
Sauté in hot oil for 3-4 minutes. Add 3-1/2 cups uncooked white rice to seafood mixture. Cook, stirring constantly, for 5 minutes. Then add:
1 cup white wine
1 cup crushed tomatoes,
1-1/2 cups water
1 can beer
The processed spice mixture from above
12-14 whole green olives
Gently stir it together. Cover and bake in oven at 395 degrees for approximately one hour or until rice is fluffy and fully cooked.
Put on some crotchless panties and serve the paella while it's steaming hot... The crotchless panties are optional, but I do think they make any meal more enjoyable.
Your guests are guaranteed to be impressed by your cooking and wine prowess. As the saying goes, "The way to a swinger's pants is through their stomach"... Ok, maybe that's not really a real saying, but I'm pretty sure it would apply in this case!
Bon Apetit!
